5-Course Filipino Pop-Up Dinner | The Filipino Filgramage by Chef Harold x MOSA
This is a 5-Course Filipino Dinner prepared by Chef Harold in partnership with MOSA for their Chef Pop-Up Supper Series! This pop-up is titled, "The Filipino Filgramage: One’s search for the true self."
THE MENU
Course 1: Lumpia pork and shrimp, wrapped in herbs and fresh lumpia wrapper, sweet and sour sauce
paired with the Bamboo Pilsner or Rosé Sparkler.
Course 2: Crispy sweetbreads, garlic aioli, bagoong xo, maple redux, roasted figs, local ham paired with the Yuzu Blonde or Rosé Sparkler.
Course 3: Ginataan soup, squash, zucchini, burned cabbage paired with the Milk Stout or Orange Sage.
Course 4: Lamb Belly Pinakbet, shrimp + bagoong broth, eggplant puree, baby Bok choy, green beans, squash, head-on prawns paired with the Milk Stout or Orange Sage.
Course 5: Cassava cake, honeycomb ice cream, young coconut paired with the Calamansi & Tea Lager or Berry Fennel.
